The Blue Ducks cookbook with a chocolate and beetroot brownie
October 06, 2015
The house is quite, everyone's returned to school, uni and work today. I'm back to work too, I'll be packing Ribbons Galore orders today.
But just before I get back into work, just wanted to share a little story.
My gorgeous 17 year old, who had a lovely few days in Byron Bay with friends last week, went to the Three Blue Ducks for lunch and, knowing how I love a photo of good food, sent me a beautiful image of her lunch. It looked so delicious, it made me want to jump in the car and drive to Byron to have lunch!! (see below, pork, crackling, apple… I was dissecting the photo when she sent it through)
On her return, Phoebe presented me with the Blue Ducks cookbook (how did she know I'd love that?). So many recipes I'm going to try in this book and the food photography makes me want to lick the pages.
First recipe I've made is the Chocolate and Beetroot Brownie, yes, there's grated beetroot in there. Oh what a way to eat your vegetables! I did change the recipe a little, I added finely grated zest of an orange and a couple of teaspoons of cinnamon. It's dense and fudgy and very chocolatey and yes, you can taste the beetroot in there.
When we've munched our way through this slab, I'll be making some of the other delicious recipes, some will be lovely for our warm summer evenings (there's a good mix of savoury and sweet/baking recipes). Once I've cooked my way through this cookbook, there is a second one now available from the boys, Three Blue Ducks Real Food. I'll add that to my wish list, Christmas is just around the corner. :)
(Just a little note: I have popped some of the brownie in the freezer for later, cause this is way to much for us to eat in a few days).
Hope you have a good week.
